it seems you suppose the engine at right temperature level, but the temp LED indicating overheat ? Is the temp gauge at normal level all the time ?
If this applies, and the light goes out after overfilling the coolant expansion tank, lets me guess that switch in the lid of the coolant tank might be kind of sticky or contaminated.
Suggestion: you disassemble it (if possible?), clean, and reassemble it; otherwise flush ist thorougly with clean water.Overfilling this container should not cause any problems, except spitting the excess.
